This varieties of tomatoes are particularly suitable for drying. The process takes place in closed tunnels with air flow constant at about 35/40 ° C. So there is not exposure to sunlight and open air, nor they are salting. All of this leads to a product without sodium, with colors more marked and more healthy. The drying is very thrust so as to lose about 90% of the original weight. This guarantees a perfect preservation without the aid of oil and / or preservatives.
